Tucked into the heart of the Ariège, the Couserans is one of the most authentic and quietly beautiful regions of the Pyrenees, where mountain traditions, village life, and landscapes remain deeply connected.

You are welcomed at the Foix train station before traveling in the van into the Couserans region of the Ariège. Along the way, we stop for a relaxed picnic lunch beside a mountain waterfall, our first introduction to the rivers, forests, and landscapes that shape life in the Pyrenees.
After arriving in Saint-Girons, the capital of the Couserans, you have an opportunity to settle into La Cachette de Nina, your accommodations for the week. Afterward, enjoy time to wander the town, explore the riverside streets and cafés, or simply relax and settle into the slower rhythm of the region.
In the evening, we gather for a welcome dinner and an introduction to the landscapes, history, and traditions that will accompany us throughout the week.
Included: gourmet picnic lunch, dinner
Our first walk takes us into the landscapes of Sourroque Forest, where mountain paths once served as vital routes for smugglers, shepherds, traders, and wartime escape networks.
This gentle hike offers a beautiful introduction to the region’s terrain while also exploring the human stories connected to these mountains. During World War II, local passeurs guided refugees, resistance fighters, and Allied airmen across the Pyrenees toward Spain, often at tremendous personal risk.
Walking through woods and quiet mountain trails, we begin to understand how these landscapes shaped both survival and solidarity.
The remainder of the afternoon is intentionally relaxed, allowing time to enjoy village life, local cafés, and the peaceful atmosphere of the Couserans.
Included: breakfast, lunch, escorted hike, dinner
Distance: 4 KM or 2.5 miles | Ascent: 110 m or 361 ft | Duration: 2 hours | Terrain: rolling hills, rock steps
Today we travel to Foix for one of the region’s vibrant weekly markets. Guests will have time to wander among local produce stalls, cheeses, breads, charcuterie, and artisan goods while experiencing the social rhythm of market day in southwestern France.
Together, we assemble a picnic lunch from the market before visiting the imposing Château de Foix, whose history offers another perspective on the region’s long relationship with resistance, independence, and mountain identity.
From medieval conflicts to the Cathar period and beyond, the Ariège has long existed slightly apart, shaped by geography, resilience, and strong local traditions.
This cultural day provides a pause between walks while deepening our understanding of the region and its people.
Included: breakfast, guided tour of Foix market, dinner
Today we take part in one of the most meaningful traditions of the Pyrenees: the annual Transhumance.
Together with local shepherds and community members, we follow flocks of sheep and goats as they make their seasonal journey toward the high mountain pastures. Bells echo through the valley as families, farmers, musicians, and visitors gather to celebrate a tradition that continues to shape mountain life in the region.
The walk itself is gentle and communal rather than strenuous, with frequent pauses and opportunities to experience the atmosphere of the event. The day concludes with a leisurely shared lunch and local festivities.
For many travelers, this becomes the emotional heart of the journey — not simply observing local culture, but participating in it.
Read about the founder’s firsthand experience in the blog post, Walking with the Shepherds: The Living Tradition of Transhumance.
Included: breakfast, escorted walk, 3-course lunch
Distance: 12-15 KM or 7.5 to 9.3 miles | Ascent: 79 m or 260 ft | Duration: 3 to 4 hours | Terrain: mostly flat on paved or gravel paths
After the energy of the Transhumance, today offers a slower exploration of the Bethmale Valley and its pastoral heritage.
We visit local producers and learn more about the agricultural traditions that sustain mountain communities, including the cheeses and foods deeply connected to seasonal life in the Pyrenees. Depending on local availability, the day may include a cheese-making demonstration, tasting experience, or visit with regional artisans.
Later, we travel into the valley for a relaxed lakeside picnic surrounded by some of the region’s most iconic pastoral scenery — green meadows, forests, grazing lands, and steep mountain walls.
This quieter day allows time to absorb the atmosphere of the region and deepen connections with the people and traditions encountered throughout the week.
Included: breakfast, lunch, dinner
Our final walk brings us into the open landscapes of the Moulis Valley, where broad mountain views, high meadows, and ridgeline paths provide a fitting finale to the journey.
Unlike the forested atmosphere of our earlier hike, today’s route emphasizes open panoramas and the pastoral beauty of the central Pyrenees. Along the way, we reflect on the many ways these mountains have connected people across generations — through seasonal migration, village life, resistance routes, and shared traditions.
This is a day to savor the landscapes slowly: long lunches, quiet viewpoints, and the expansive feeling of the Pyrenean high country.
In the evening, we gather for a final dinner together to celebrate the week’s experiences.
Included: breakfast, lunch, escorted hike, dinner
Distance: 4-6 KM or 2.5 to 3.7 miles | Ascent: 250 m or 755 ft | Duration: 2.5 to 3.5 hours | Terrain: Moderate ascent and descent with occasional steep sections.
As the week comes to a close, you leave not only with memories of beautiful walks and mountain scenery, but with a deeper understanding of the living culture, traditions, and history that continue to shape life in the Ariège and Couserans today.
After breakfast, we depart Saint-Girons, and you’ll board a small boat to glide along the Underground River of Labouiche, the longest navigable river of its kind in Europe. This serene journey through sculpted limestone galleries is a striking reminder of the region’s geological richness—and a memorable, reflective way to conclude your adventure.
Afterward, you return to Foix to bid a warm farewell to your fellow travelers, carrying home lasting memories of the Pyrenees.
Included: breakfast, cave entry, picnic lunch
