Day 1

Arrival & The Birthplace of Sparkling Wine

Step into the rhythm of southern France, where your journey begins not with a checklist, but with guided exploration.

After meeting in Carcassonne, we travel into the rolling countryside surrounding Limoux. a quiet region with an extraordinary claim: this is where sparkling wine was born. 

At the historic Abbey of Saint-Hilaire, you’ll walk through centuries-old stone corridors where monks first created the world’s earliest brut. As you taste Blanquette de Limoux in the place it began, history becomes something you can sip, not just hear about.

After, a beautifully prepared picnic lunch, you arrive at your home for the next three nights, a peaceful countryside hotel tucked into the hills.

The evening gently unfolds with a thoughtfully prepared three-course dinner, paired with regional wines.

Cathar Landscapes & Wine from the Land

Today begins with a journey into the dramatic past of the Cathar region at Château de Puilaurens, a fortress rising above the valley, shaped by centuries of history and resistance.

 

You choose your pace: Climb to the top for sweeping views, or remain lower and absorb the atmosphere in stillness.

From here, enjoy a peaceful walk through a hidden gorge where shaded paths and flowing water invite stillness and awe.

Later, you step into the world of an independent organic winemaker. Walk through the vineyard alongside the grower, feel the ground beneath your feet, and begin to understand how soil, climate, and care shape each bottle. In the cellar, you taste wines at different stages.

Return to your hotel for a relaxed evening and another beautifully prepared dinner.

Wild Beauty and a Winemaker’s Table

Today is about immersion. Into landscape. Into culture. Into the heart of wine itself.

The morning begins in the breathtaking Gorges de Galamus, where towering cliffs rise above turquoise waters.

Then, one of the most memorable experiences of the journey: A visit to a biodynamic vineyard where winemaking is both craft and philosophy.

Lunch here is an experience, not just a meal.

A multi-course feast, prepared and paired with the estate’s wines, unfolds slowly around a shared table. You begin to feel what French food culture really is: connection, presence, and care.

The afternoon returns gently to stillness, with a relaxed evening at your hotel and time to rest or explore as you wish.

Market Morning & A Gentle Farewell

The final morning invites you into everyday French life.

In the medieval town of Carcassonne, a vibrant market fills the historic square beneath timber-framed arcades. Here, you are free to wander, taste, and explore at your own rhythm, choosing how you want to end the journey. 

Pick up local cheeses, seasonal fruit, or artisanal goods, or simply sit with a coffee and watch the flow of village life.

In the afternoon, we return to the Carcassonne train station, bringing the journey to a close with space for a final shared moment or a recommendation for where to continue your experience.
